Meet Toby Amidor, MS, RD, CDN, FAND Owner of Toby Amidor Nutrition, PC. Toby is an author of eight books, a spokesperson, speaker, recipe developer, and nutrition expert for a few large publications! What attracted you to the field of nutrition and dietetics?

In the early 1990s, I was in college and wasn't sure which career path to take. My mom and I visited the local library and looked at an article on future successful jobs and saw dietetics top that list. I then took a few classes in college and fell in love with the topic-- and the rest is history!

Describe a typical (or not so typical) day-in-the-work-life for you?

Much of the time I am at my desk going through emails, doing paperwork, writing content, working on presentation, or developing recipes. When I am in cookbook mode or developing recipes for a client, then part of my day will be spent going grocery shopping and in the kitchen testing recipes. I also work as a spokesperson with clients and speak at various meetings (like state AND meetings, family physician meetings, FNCE, other professional meetings, or internally at a company). If something has a deadline and I was busy with my kids (or dogs) that day, then I will stay up late or wake up at 4 or 5am to finish it.

How did you get your current job in dietetics?

One thing led to another. I was in a class at Teachers College, Columbia University where a teacher made an announcement about content needs for a website. I ended up working for that website who subsequently went bankrupt and bought over by Scripps Network who at the time owned FoodNetwork.com. The person I met with wanted to build a healthy section on the FoodNetwork.com website and I then became the initial contributor (along with my colleague Dana Angelo White) for their healthyeats blog.

It's been 17 years and I still contribute to that blog and am now the nutrition expert at FoodNetwork.com. From that, I was able to grow my consulting practice and write for numerous other top tier media outlets, work on numerous FoodNetwork shows, work as a spokesperson for commodity boards and food companies and have 10 published cookbooks.

What skills were you born with and what skills have you learned along the way?

I always loved to multi-task and work quickly. That is a skill that I was born with. Writing, however, wasn't always my forte and no one was writing blogs when I was first asked to do it in 2008. So learning how to write a blog post was challenging at first but now it is a breeze for me.

What advice do you have for others wanting to be just as successful and fulfilled as you?

You can't just jump to the top overnight. It takes hard work and a lot of it. Start with local jobs, local TV segments or writing gigs -- collect all your work to showcase them to the next level which is statewide and then hopefully that can lead to national work.
