What attracted you to the field of nutrition and dietetics?
I am a fan of food. I love everything about it – how it is grown/produced, childhood memories and family traditions, food from various cultures, culinary and the eating experience, and the science behind food on our bodies. I always had an interest about the latest nutrition facts as a young adult (as my mom would always say), so my interest and passion for food led me to my path in nutrition in college. From there, I always knew I would be out in the community either educating others on nutrition, helping people improve their lifestyle, or providing expertise and the latest science-based information.

Describe a typical (or not so typical) day-in-the-work-life for you?
Each day is a different yet exciting day in the restaurant industry. In this fast-paced environment, we are always innovating new foods. My main role includes nutrient analysis on new menu items, overseeing allergens and all guest-facing materials, ensuring we are in compliance around food and nutrition regulations (Menu Labeling, Kid’s menus, state and local regulations), assisting the Culinary Operations teams with recipes and training materials, and providing expertise on ingredients and recipes. In addition to my nutrition responsibilities, I also perform food cost analysis for the company and am responsible for building and maintaining our database, participating in cross-functional projects, and reviewing the system for accuracy of recipe builds.
How did you get your current job in dietetics?
For the last seven years, I have worked in the foodservice industry, school nutrition, and now as my current role in the restaurant industry. My past roles included regulation compliance, menu analysis, culinary training, and recipe development. I was looking to adventure further into the culinary world and had the amazing opportunity to apply for the Nutritionist position with Cracker Barrel. I have been a part of this amazing company for four years and look forward to the possibilities ahead.
What skills were you born with and what skills have you learned along the way?
I was born with a love of food (especially dining out and exploring new restaurants) and a handful of skills that come easily to me: multitasking, thriving under pressure, organization, communication, leadership, and attention to details. These skills have helped me throughout my education and career. I had to develop skills in nutrient analysis and improve in recipe writing. I had a slight learning curve when I began food cost analysis, and I continue to grow and gain new skills. I am currently working on project management skills and hope to continue to grow in leadership opportunities.
What advice do you have for others wanting to be just as successful and fulfilled as you?
Take the opportunity, even if it may not be what you expect and/or think you want. I “fell” into foodservice not thinking of it as a long-term path, but now that I am in it I don’t see myself in any other specialty. You never know where opportunities will take you. Also, network! My connections have helped me explore new possibilities as well as been amazing resources when in need. Don’t get discouraged. Keep exploring the opportunities!
