Registered Dietitian

POSITION SUMMARY:

As a member of the Dining Services team, the Registered Dietitian collaborates with the Senior Registered Dietitian, Director of Health Promotion, and café Chef/Manager to provide outreach programs to the university community on topics related to food, nutrition, and wellness.

The Registered Dietitian manages all aspects of the demonstration kitchen, including teaching, purchasing, event planning, executing, and oversight of participants. Also, assists the Senior Registered Dietitian with assigned confidential nutrition counseling, projects, and initiatives.

JOB DUTIES/RESPONSIBILITIES:

Operations 60%

  • Manage all aspects of the demonstration kitchen and its educational mission.
    • Develops training programs, manuals, visual aids, and other requisite materials in collaboration with the Senior Registered Dietitian and the Director of Health Promotion. Teaches classes, conducts cooking demos, and coordinates guest presenters.
    • Ensure all food production meet established standards for quality, presentation, and temperature.
    • Orders food and supplies within established budget. Monitors purchases for product integrity. Manages inventory.
  • Maintains/creates all required logs, records, and financial reports.
  • Manages and maintains the care of facilities, equipment, supplies, and materials.
  • Supervises and maintains established sanitation/HACCP codes and procedures in all production areas and maintains all health and safety standards according to the Virginia health code regulations and departmental standards.
  • Promotes the positive reputation of Dining Services and the Wellbeing Center through effective public relations and communication.
  • Event participation (orientation, wellness fairs, student programs and outreach educational programs)
  • Represents Dining Services by planning, coordinating, and participating in orientation programs, wellness fairs, campus events, cooking demonstrations, and other educational outreach initiatives.

Nutrition Education 40%

Assists the Senior Registered Dietitian with some or all of the following:

  • Develop standardized recipes and menus; ensure adherence to established nutritional standards.
  • Manages online program for nutrition facts, ingredients, and food allergen identification.
  • Provides confidential nutritional counseling to students, faculty and staff, including assessment, development of nutrition plan, follow-up, and documentation.
  • Trains food service production personnel, as assigned, in concert with Dining Services’ managers in methods of food production, sanitation, and customer relations for special dietary needs.
  • Conducts research and/or manage special projects, as assigned.

QUALIFICATIONS:

  • Ability to communicate effectively, both orally and in writing, and work with a wide range of constituencies in a diverse community.
  • Ability to foster a cooperative work environment, while providing a high level of service.
  • High level of time management, organizational, and problem-solving skills.
  • General knowledge of food production principles and techniques, and ability to instruct interactively while preparing food.
  • Significant knowledge of food allergies, related diets, and dietary controls.
  • General knowledge of medical conditions as well as specific dietary recommendations for each condition.
  • Proficiency in Microsoft Office suite, and the ability to learn software programs.
  • Proficiency in public speaking
  • Ability to work independently

EDUCATION & EXPERIENCE

  • Master’s degree required
  • Registered Dietitian with the Academy for Nutrition and Dietetics, or RD eligible within 3 month of hire; culinary concentration required.
  • One year of experience conducting cooking demonstrations preferred; management experience preferred.
  • One year’s experience in nutrition counseling is preferred.
  • AllerTrain and ServSafe certification required (or obtained within a year of hire).
