Job Description and Requirements

Description of work:
The Food and Nutrition Management Section is recruiting for a Western Region Dietitian (RD). Work involves providing professional nutrition and food service management consultation to state correctional facilities. Requires travel to assigned facilities to conduct food management audits, inspections, assist in interviewing and other facility visitation needs. Audit the food service department annually evaluating the hazard analysis critical control point system and food safety, administrative record keeping, food service software requirements, therapeutic diet regulations, inventory control, and appropriate equipment utilization. Discuss audit results with facility management. Assist in food service staff recruitment and retention activities and track vacant food service positions. Develop and present nutrition related workshops for assigned region and statewide when needed. Development of educational and promotional material for staff and instructions for inmates as needed. Complete nutrition assessments and enter information into computer. Monitor nutrition needs of inmates receiving therapeutic meal plans in assigned region. Provide technical expertise to administrative, medical, and food management staff statewide in the area of policy development, problem solving, staff education development and nutritional assessments. Provide nutrition instruction and guidance to medical and food service staff in regards to medical nutrition therapy.

Knowledge, skills and ability:
Must have knowledge of the principles and practices of normal and therapeutic nutrition and the relationship to chronic diseases. Also, able to apply knowledge of the principles and practices of behavior change, nutrition needs across the lifespan, program planning, implementation and evaluation and food service delivery. Must have knowledge of institutional food service equipment. Ability to interpret, understand and translate research finding into education information, communicate clearly and effectively orally and in writing and to prepare and present educational and training material to professional and lay groups. Skills in planning, designing and delivering educational program, planning programs and intervention strategies, public speaking, organizing, working with the individuals and on a team. Computer skill proficiency and knowledge is a must.

Training and experience requirements:
Graduation from a four (4) year college or university with a Bachelors Degree in food and nutrition, dietetics, or related area and completion of an ADA approved coordinated undergraduate program or dietetic internship with the ADA commission on dietetic registration eligibility required, plus five (5) years of experience in dietetics; or a Masters Degree in nutrition, food service, or dietetics with the ADA commission on dietetic registration eligibility required, plus three (3) years of dietetics experience or an equivalent combination of education and experience.

Location: The position will be located out of the Western Region office of the Division of Prisons in Lenoir, NC.
