Job Description and Requirements

Based on a broad knowledge of regular and modified diets, verifies the accuracy of the food items listed on the tray ticket based on the prescribed diet and patient food preferences/tolerances. Makes appropriate changes to tray tickets as needed. Identifies discrepancies between the prescribed diet and / or listed food allergies and the food items listed on the tray ticket.

Places specified items on trays as listed on patient tray tickets and menus according to established portions. Decides what food items to serve the most common diets when the tray ticket identifies only the kind of diet called for such as liquid or low sodium. Prints and processes information from the computer related to diet orders, tray tickets, food tallies, supplemental feedings, tube feedings and other computerized data necessary to determine the number of servings when portioning salads, desserts, and special modified items for the tray line and between meal feedings.

Reports patient and ward staff comments and complaints to the supervisor, work leader or dietitian, as appropriate. Initiates the paperwork for calorie counts and documents food consumption based on foods returned to the kitchen on patient trays. Responds to questions received over the telephone and telephone recorder regarding menus, modified diets, meal service times, patient tray service procedures, requests for food, and refers appropriate questions to the appropriate staff for follow up. In the rare event of a special nutritional supplement/drink/formula recipe, applies broad background in food service and high degree of accuracy in weighing and measuring ingredients to assure exact attention to detail in preparation of the recipe.

Your background must demonstrate experience in a variety of food service worker duties such as a broad knowledge of regular and modified diets, verifies the accuracy of the food items listed on the tray ticket based on the prescribed diet and patient food preferences/tolerances. Makes appropriate changes to tray tickets as needed. Identifies discrepancies between the prescribed diet and / or listed food allergies and the food items listed on the tray ticket. Weighs, measures and assembles ingredients for regular and modified menu items. Determines the quantities of ingredients needed to prepare required yield. Assists in training lower grade employees on routine methods and procedures used in assigned functional areas. Must have the ability to read, write, complete tallies involving arithmetic and counting and follow more involved oral and written instructions, must be able to perform arithmetic calculations involving decimals and fractions as when modifying tray tickets for fluid restrictions, calculating quantities for tube feedings and weighing ingredients for issue with recipes.

EXPERIENCE: A specific length of training and experience is not required, but you must show evidence of training or experience of sufficient scope and quality of your ability to do the work of this position. The potential eligibles are then rated against the remainder of the questions. The screen-out element for this position is Ability to do the job of a cemetery caretaker without more than normal supervision.


PHYSICAL EFFORT/REQUIREMENTS:The incumbent performs work requiring light to moderate physical effort. Subject to continuous sifting, standing and walking, and frequent stooping, reaching, pushing, pulling and bending. Frequently lifts or moves objects weighing up to 40 pounds. The incumbent may be required to perform heavy work, such as scouring and scrubbing large-size cooking utensils and pushing heavy carts and trucks in unloading, storing, and delivering supplies. May be required to work on ladders and use power equipment.

WORKING CONDITIONS: Usually works indoors in areas which normally have adequate heat, light, and ventilation's. Will be exposed to vibration from heavy equipment and to skin irritations from strong cleaning solutions used in stripping floors, etc., as well as subject to cuts and bruises. Continually exposed to dust, dirt, and disagreeable odors, and is frequently exposed to organic material which may be contaminated and/or infectious and require special handling.
